Home Cooked Yellow Croaker

Prepare the raw materials, remove the viscera of yellow croaker, clean the gills, etc.;

Cut the fish on both sides diagonally, put on salt and marinate for 40 minutes (it is best to marinate in the refrigerator);

For the marinated yellow croaker, wipe off the water with kitchen paper;

Pour edible oil into the wok, the oil temperature is 5~60% hot, slowly add yellow croaker along the side of the wok, and fry until both sides are colored;

Place the fried yellow croaker on one side of the pan, and use the remaining oil to fry the shallots, garlic cloves, ginger slices, pepper and aniseed;

Add 3 tablespoons of cooking wine, 3 tablespoons of balsamic vinegar, 2 tablespoons of light soy sauce, sugar in turn, then add a small bowl of hot water, and simmer for 3 minutes. The soup is thickened and placed on a plate.
Tips:
Because yellow croaker has been marinated with salt, do not put salt in the stew.
