Wash the bream and cut it with a knife. Shred ginger and slice garlic. Marinate the bream with cooking wine, shredded ginger and salt.

Put the oil in the oil pan and fry the marinated bream in the oil after 80% of the oil is hot. After frying the fish skin as shown in the picture, add ginger and garlic and fry. Add a small amount of water, add a few drops of soy sauce, or release light soy sauce. The dark soy saucers are bright red. Put a little sugar to remove the fishy smell.
