Homemade Dried Bayberry

Dad's own bayberry

Freshly picked bayberry, soak it in light salt water for 10 minutes to remove the small bugs in it and wash it for later use (forget to take pictures)

Put water in a pot and boil, then add 2 tablespoons of salt, after a little boil, pour the water to remove the sourness

Add water to the pot again, (you can add more if you want to drink bayberry soup) to boil, put in the right amount of rock sugar and honey, you can also add white sugar (but white sugar is more flavorful when cooked, my son said rock sugar tastes good)

When the water is almost dry, collect the juice on a low heat and stir fry continuously, otherwise the sugar will burn. This process is relatively long, so be patient π

Stir-fry until all the sugar is dried. I prefer to eat softer ones, so that's ok. If you like to eat dry, you can bake it in the oven or put it in the sun (but easy to attract flies) sweet and sour, it tastes very good.
