200 grams of pig skin, 180 grams of pork (pig buckeye is better)
Accessories: oil, salt, soy sauce, cooking wine, sliced ginger and green onion
2.
Pour all the pork and pig skin into the pot, add the shallots, ginger slices, and cooking wine to remove the smell, then pour in an appropriate amount of water, blanch for about 5 minutes, and then remove.
3.
Use a knife to clean the grease on the surface of the pigskin. If there is any hair, remember to use tweezers to remove it.
*The first two steps must not be omitted. After blanching and scraping the oil, the pork skin will taste more refreshing and will not feel peculiar.
4.
Cut the processed pig skin into small strips and pour it into the pot.
5.
Add soy sauce, fresh mushroom powder, and water to the pork skin strips
6.
Bring to a boil on high heat until the water boils, then turn to medium and low heat and cook for about 30 minutes.
7.
When the time is up, put pork in the pot and continue to cook until the pork is fully cooked. Here I used it for 25 minutes.
*Because I want to make meat jelly that babies can eat this time, I add less seasoning. If you make it for yourself, you can add spices such as pepper, star anise, bay leaves, and cinnamon to cook together.
8.
Add appropriate amount of salt to the pot to taste, stir evenly, and continue to cook for about 5 minutes.
9.
Then take out the cooked pork, cut it into small filaments, and pour it back into the pot.
10.
Add appropriate amount of salt to the pot to taste, stir evenly, and continue to cook for about 5 minutes.
11.
Pour the prepared meat and soup into the mold together and put it in the refrigerator for about 3 hours. I made 2 bowls of these ingredients in total. You can also put it directly into the mold and cool it to a solidified state at room temperature, which will take a little longer.
12.
After solidification, take it out, buckle and release it, cut into small slices, and put it at room temperature for the baby to eat.

This fresh pork skin is served frozen on the table, tender, soft, and full of elasticity.
After eating it, I am more determined to make strides towards 2021. Looking back at myself last year, fortunately, we gritted our teeth and made it through. This year, we will definitely be better.
