Homemade Roast Chicken

One grass chicken, washed, cut into pieces, and watered, in order to remove the fishy smell of the chicken

Cut the ingredients well and set aside

For chickens that have been well-watered, rinse with cold water to wash off the dirty foam on it and control the water

Pour oil in the pot, heat it to 70%, add pepper, star anise, and ginger slices and fry until it tastes good

Pour in the chicken, stir-fry for a while, add the green onions, and continue to fry

After the moisture is gone, pour in the white wine (when the white wine is reached, the pot must be hot, so that the wine can smell)

Add red pepper and garlic cloves

Pour the dark soy sauce and salt, and continue to stir fry

Pour in boiling water, cover, and boil for 10 minutes

Adding the green pepper section is very important, because a chef friend said that adding green pepper when roasting the chicken will make the chicken taste particularly good

Sprinkle chicken essence and stir fry a few times
