Homemade Scallion Cake

Prepare the ingredients. The flour should be rich and strong. It belongs to medium-gluten flour, which is most suitable for pancakes. Don't choose high-gluten flour. High-gluten pancakes are hard.

2/3 of the flour is first blanched with boiling water to form noodles, and then the remaining 1/3 of the flour is mixed with cold water.

Mix the two kinds of noodles with chopsticks (mix well to keep your hands hot)

Knead into dough for more than half an hour (if you stick your hands, it will be easier to knead after a little bit)

Sprinkle dry flour on the dough table, put the good dough on top without kneading, directly dip it into flour and knead it into thick strips, and cut them into equal-sized dough

Take the dough and roll it into a round dough sheet, brush a layer of vegetable oil, and sprinkle a little salt for the bottom taste

Sprinkle another layer of chopped green onion and use it to make a cut from the inside

Pull one end from the notch and roll it down

Roll it into a round cake and make other cakes in turn. I made seven in total

Preheat the electric baking pan, brush with vegetable oil, put on the lid and bake it, turn one side yellow and then turn the other side, the cake can be out of the pan when it bulges
