Homemade Tofu Brain

Weigh 100 grams of dried small soybeans and prepare glucosinolates

Soak the soybeans in clear water overnight, and the hair will rise completely, and the water will be filtered out after the soaking (weighed down, 100 grams of dried soybeans will be soaked for 236 grams)

Add 1000ml of water to the soymilk maker

Pour in the soaked soybeans and turn on the soy milk function

The prepared soy milk is filtered twice with a filter (use gauze or cloth bag to filter the effect will be better)

I measured the temperature of the filtered soy milk, and it was only 72 degrees. The suitable temperature for the soy milk to put the lactone is around 85 degrees.

Pour the soy milk into the pot and reheat it. Cook on medium heat until you see the side of the pot start to move, and then it will be bubbling. If the temperature is enough, turn off the heat.

Weigh 2 grams of glucolactone in advance and dissolve it with a teaspoon of cold water

Pour the melted glucose lactone liquid into the pot and stir while pouring

Cover the lid and let it stand for about 15 minutes (in order to maintain the temperature, I put the whole soy milk pot in a large pot filled with hot water, in fact, it should be okay not to do this step)

Prepare shrimp skins, chopped mustard greens, green onions, chopped seaweed and light soy sauce (if you like sweet, ignore this step, just replace it with the sweet taste you like)

After the soy milk in the pot has solidified, use a large spoon to put it in the bowl, put the shrimp skin, seaweed, mustard, green onion on the surface, pour some light soy sauce (you can also drop a few drops of sesame oil), mix well and start it.
