Hot and Sour Noodles

First take one or two red potato powder and soak in cold water. This sweet potato powder was sent by someone else. It is made from natural well water and is relatively fine. There should be fine and coarse ones on the market, depending on which one you like to eat and choose.

Tear the garlic skin, mash it and soak it in boiling water, so that the smell of garlic will stand out.

Put half a spoon of salt, half a spoon of chicken essence, a spoon of light soy sauce, a spoon of vinegar, a spoon of vine pepper oil, a spoon of chili oil, green onions, garlic, and celery in a bowl

For the spicy ones, you can choose to put some spicy millet. You can also add some sugar, which can increase the umami taste and make the taste more refreshing. I prefer to be spicy, so I added some chili sauce that I made to increase the spiciness.

Boil the water for about 5 minutes. After the water is boiled, add the soaked powder and cook for about 5 minutes.

Cook water spinach in another pot and put it in a bowl.
