For the Guangdong version of the hot and sour noodles, spicy is not the point, but deliciousness is the point of this bowl of hot and sour noodles. I only collect sweet potato flour once a year. My neighbor is a good friend of mine. Her hometown is in Hunan. Her family makes sweet potato flour once a year. When she receives the sweet potato flour, she will give me half of it. The sweet potato flour has changed the way to make all kinds of delicious food, so that my family can enjoy this pure natural sweet potato flour. "

Hot and Sour Noodles

1. Process the sweet potato flour, soak the sweet potato flour, and soak the sweet potato flour softly.

2. Boil water in a pot, add soft sweet potato flour and cook.

3. Remove the cooked sweet potato flour and place it in a bowl.

4. Heat the oil in a wok and sauté the garlic.

5. Add two spoons of Sichuan spicy sauce and stir fry until fragrant.

6. Add 1 bag of stock.

7. Add vinegar, soy sauce and water to a boil.

8. Add the greens when it is boiled, and blanch it on top of the sweet potato flour.

9. Put the enoki mushrooms and boil them until they are cooked. You must remove the enoki mushrooms within one minute and place the enoki mushrooms on top of the sweet potato flour.

10. Pour the broth into a large bowl of sweet potato flour, sprinkle with coriander and cooked peanuts.

Tips:

1. The broth can be made from chicken bones and pork bones. This time the pork bone broth is used, which is simple and convenient to use.
2. The sauce can be put in according to the individual's acceptance of spicy. I personally can only accept medium spicy, so I won't put a lot of spicy sauce or red oil.
3. Soak the sweet potato flour in cold water first, and then boil it in a pot. The prepared potato flour is non-sticky, soft and firm, and tastes better.
4. The peanuts sprinkled here are spicy peanuts of a certain brand. Of course you can use deep-fried peanuts and soybeans yourself.
