Hot Noodle Soup with Sauerkraut and Pork Intestines

The braised sausage is prepared before (the detailed method will be updated in the follow-up recipe). Take out the kimchi from the kimchi jar and cut it into small pieces with a knife (I used pickled radish, pickled cabbage and two pickled peppers).

Heat oil in a pan, add sauerkraut and sauté until fragrant.

Put in an appropriate amount of water.

The amount of water depends on the amount of noodles to be cooked.

Bring the sauerkraut soup to a high heat, and simmer it on a low heat for five to ten minutes to let the flavor of sauerkraut release, so that the soup has the taste of sauerkraut.

After the sauerkraut soup is cooked, add an appropriate amount of dried noodles and cook until you like the softness and hardness.

Put the braised sausages in the noodle bowl, and then transfer the cooked sauerkraut noodles with soup noodles into the bowl.

Sprinkle with chopped green onions and eat.
Tips:
The sauerkraut has enough salt, and the soup has a salty taste after being boiled, so no salt is added during the whole process. If you like, you can add a bit of chicken essence when you scoop the noodles.
