Kumquat Jam

Rub the kumquat on the surface with salt, then rinse it off with running water, and wipe off the water with a kitchen paper towel.

Cut the kumquats and remove the seeds.

Chop again.

Put it in the pot and add rock sugar.

Add water and start boiling.

Cook until the kumquats become transparent and the jam is sticky.

Put it into a glass bottle in a sterilization pot while it is hot, and cool it down. After cooling down completely, put it in the refrigerator and consume it as soon as possible.
