We call glutinous rice balls Yuanzi here, and the status of Yuanzi and wonton is equivalent to dumplings in the north. It is necessary to appear on festivals, weddings and funerals. When I was young, I always thought that Yuanzi was the same thing as Yuanxiao and Tangyuan, but now I realize that the method is a little different.
Yuanzi fillings are divided into two types: sweet and salty. The salty stuffing is usually the shepherd's purse meat stuffing, which is blanched with greens and shepherd’s purse and chopped into vegetable puree, mixed with the minced meat, seasonings and oil; the sweet stuffing is usually fried with red bean paste and lard, sometimes with red dates. It is mixed with peanuts into red dates and peanut filling, but sesame filling is not common.
I don't know how other areas make noodles. It seems that many places in Shanghai use rice porridge to make noodles. Older people say that rice porridge and noodles are not easy to crack when they are made.

3. When you feel no grains of rice, don't feel sticky, and have moderate hardness, rub the strips and pick the agent, about the size of a ping-pong ball. We are all big rounds here, I usually eat 5 and I'm full.

The same is done for dousha Yuanzi, the shape is round. PS: My grandmother’s place is the other way around. Sweet ones make droplets, salty ones make rounds. If there are other fillings, they will make long rounds.

9. After the water is boiled, lower the ball and push it along the bottom of the pot with a spatula to prevent adhesion.
