Meat Jelly

After the skin is cleaned, scrape the surface with a knife to remove the floating hair and other impurities. Put cold water into the pot and cook until the skin is translucent. Remove it and let it cool.

Put the skin on the chopping board with the inner side facing up. Use a knife to scrape off the fat on the inner side of the skin. Use a knife to scrape the outer side of the skin again. Pick up any hairy areas.

Rinse with hot water and cut into shreds.

Green onions, ginger, garlic, pepper, star anise, cinnamon, bay leaves, put them in the seasoning box, add water to the pot, put it in the bag and boil

Add shredded pork skin, boil over high heat, add soaked soybeans and add appropriate amount of salt, continue to cook until the soup becomes thick

Pour it into the prepared container, let it cool, and put it in the freezer of the refrigerator to quickly freeze it. After it has solidified, use a toothpick to draw a circle around the inside of the container to pour out the skin jelly, which can be sliced and served with dipping sauce.
