Meat Jelly

Boil the pork skins under cold water for about ten minutes

Scrape the fat on the pigskin and cut into small strips (forgot to take the picture of the skin scraping! Hey! This is the most difficult step to deal with)

Put the pork rind in a casserole, add water, add the green onion and sliced ginger

Wrap with gauze, pepper, star anise, cinnamon, add dark soy sauce, light soy sauce, salt

The finished product! I add a lot of soy sauces, I like this color better, it feels like my mother made it when I was a child

Cut into wide slices, add salt, chili oil, vinegar, and pepper. A bowl of hot and sour skin jelly is here!
