Meat Jelly

Cut the meat into small pieces with a knife, boil the blood in a pot under cold water, rinse off, and cook the skin for 10 minutes.

Remove and clean up, cut into strips with a knife, put in a basin, sprinkle a large amount of salt, rub out excess greased paper, and rinse with clean water.

Pour the meat and pig skin, water, salt, chicken essence, green onion, ginger, star anise into the pot. Bring to a boil and simmer for 2 hours.

Take out the slag, soak in the old soy sauce and mix the color, and put the dried tofu skin on the plate.

Pour the boiled pork skin jelly on top and cover with 10% dried tofu skin, let cool, and cut into pieces.
