I learned the recipe of the old Beijing chef from Douyin, adjusted the amount a little, and made this old Beijing dessert. The entrance is cool and sweet, very suitable for summer.

Old Beijing Watermelon Dew

1. Cut the watermelon into pieces and pick out the watermelon seeds.

2. Strain the watermelon juice after squeezing it.

3. Pick out the scum again

4. Try to pick the foam as clean as possible, leaving pure watermelon juice.

5. Take 10 grams of agar and soak in purified water. The amount of water is less than the agar. It is best not to use gelatin here, because gelatin is extracted from animals and has a more or less fishy smell, while agar is extracted from plants. Soak for more than 30 minutes.

6. Take the granulated sugar and soak it naturally with about 200 grams of warm water. This sugar has a mint fragrance, and the fragrance comes out as soon as the hot water soaks. Granulated sugar is also the key to this dessert. It is called medicinal sugar. It is called differently in different places. After soaking, put it in the refrigerator.

7. Add 200 grams of purified water to the soaked agar and slowly burn it over a small fire.

11. Stir well and pour into a bowl. My amount is about two bowls of a normal eating bowl. The dessert container I use is a bit small. Put it in the refrigerator and freeze it for a little longer if you want to eat it colder

12. When you want to eat, take it out of the refrigerator and pour it with iced sugar water.

13. Plug in a mint and you're done.

14. Simple and delicious, the coolness of mint is very refreshing.
