Open Screen Fish

Remove the scales and wash the fresh bream bought back from the vegetable market.

First cut off the head and tail of the fish.

Cut into small sections. Do not cut off the fish maw. Carefully remove the internal organs and wash them.

Put the fish in the basin, add appropriate amount of cooking wine, salt, white pepper, green onion and ginger, mix well and marinate for half an hour.

Place the marinated fish fillets on a large plate and sprinkle with ginger and minced garlic.

Boil a pot of water in the pot and put it on the fish plate.

Steam on high heat for 10 minutes, time to cook.

Pour out the steamed soup, top with steamed fish soy sauce, add chopped green onion and red pepper rings.
9.
Heat a little oil in a small pot and sauté the chopped green onion.
10.
Serve to the table and start eating.
Tips:
If you want the fish screen to be large, you have to cut it finely. My cut is too big.
