Pea Yellow

Choose dried peas with full grains (not soybeans);

Fully soaked (I soaked this for a day);

Rub the pea skins off one by one (if you choose peeled peas, this step is omitted);

Pour the peeled peas into an electric pressure cooker, add a finger-deep water and boil for 35 minutes to crisp the peas, and pour them into a pea paste in a food processor;

Pour the pea paste and 100 grams of sugar into a stainless steel saucepan and cook;

Soak 4 grams of agar in advance to soften;
7.
When the pea paste is boiled and thick, add the soaked agar, and cook the pea paste until the big pieces are dripped with a spoon;
8.
Pour the cooked pea paste into a clean container, let cool and put it in the refrigerator;
9.
After the pea paste is shaped, cut into pieces.
Tips:
When boiling the pea paste, stir it slowly to prevent it from sticking.
