Last time I made the leftover pork skin of the Orleans grilled sausage, I made this by the way. Hehe is also the first time I made it. , I checked a lot of methods before doing it, but I made the simplest formula according to my personal preference. If you have star anise and guiping aniseed at home, you can put them in while cooking the pork rinds and cook them together. However, I think the strong aroma of these spices will cover the original hot and sour taste of pickled peppers, so everything is simplified.

Pickled Pepper Pork Skin

1. Put boiling water in a pot and boil, add the rinsed pork skin and boil for another 1-2 minutes. Take it out and put it in cold water and repeatedly scrape the skin with a knife. Be sure to clean it. If there is any pig hair, it is best to pull it out one by one, otherwise it will affect the taste. The cleaned pigskins are cut into small strips. I cut them about 5mm wide. This is arbitrary.

2. Pour in another pot of boiling water + ginger + chopped dried chili + a small amount of salt to boil, then add the chopped pork skin again, and cook for five or six minutes.
At the same time, you can prepare a closed container, add a little bit of cold boiled water + two spoons of white vinegar + a spoon of salt + a little sugar + pickled pepper water + ten pickled peppers (cut six or seven, if you like spicy, cut all of them or increase the bubble The amount of pepper) + Chinese pepper (appropriate amount), the adjusted pickled pepper soup can be mixed well with chopsticks, especially melt the sugar and salt, and adjust as appropriate after tasting the taste.

3. Finally, after the boiled pig skin is cooled and boiled, drain the water and add it to the pickled pepper soup. Cover the lid and put it in the refrigerator for at least 1 day.

Tips:

1. The first time the pigskin is boiled in water is to clean it up more cleanly, so the cooking time is relatively short. The pig skin is still hard at this time, so be sure to cook it a second time.
2. The second boiling of pigskin is to remove the smell of pigskin and to make the pigskin cooked softer and waxy, so you can pay more attention to it. Anyway, the pigskin is rarely boiled.
3. The ingredients in the pickled pepper soup can be adjusted according to your preferences, but it is said that you must put enough salt. It is best to saute the pepper in advance. If the pickled pepper water is not enough, you can use white vinegar instead, but the pickled pepper water is better. Anyway, the pickled pepper soup should be able to soak all the pig skins, and if there is less, increase it according to the proportion.
4. It is said that you can eat it for one day, but I put it for 3 days. My father-in-law said it was good, but LG said it was not spicy enough. It depends on personal taste.
