Pinto and Lotus Seed Rice
1.
Prepare ingredients: rice, pinto beans and lotus seeds. I use slightly larger pinto beans. There are red beans, mung beans or cowpeas at home, all of which can be used
2.
After washing the pinto beans, soak them in advance to make it easier to ripen and the rice is washed clean
3.
Beans are not easy to ripen. First pour pinto beans and lotus seeds into the pressure cooker, add water, start the pressure cooker, cook for 15 minutes, simmer for a few minutes, then open the lid, the pinto beans and lotus seeds are also mature
4.
Pour the rice into the pot, and the water level is a little bit higher than the rice. Start the pressure cooker again for about 5 minutes.
5.

Have a bowl and taste
7.
Nutritious and delicious bowl of rice
Tips:
Because the beans are not easy to ripen, they are cooked and boiled first, and then the rice is added. Different rice absorbs different amounts of water, so pay attention to the amount of water added when making it. Pinto beans can be soaked in advance for easier ripening. It is best to buy the lotus seeds for making rice without cores, so that they won't have a bitter taste.
