Pitaya Color-changing Buns

To get the juice of dragon fruit, you need 150ml.

Fire dragon juice liquid 150ml + 300g flour + 3 tablespoons of fine sugar + 3g yeast = a dragon fruit colored dough. (The other dough uses clean water to mix the noodles.) The dough is reconciled. It is better to be non-sticky, elastic, and not dry. Leave it to ferment for 2 hours to complete the first fermentation.

Take 1/2 of each dough and roll it out. Of course, if the panel is spacious enough, it can be rolled out all at once.

The two-color noodles are superimposed, and the noodles are rolled up. Do the same for the remaining 1/2 of the dough.

Roll into long strips and divide them into equal parts with a sharp knife.

Put it in the steamer and let it stand for a second fermentation. It must be fermented twice to double the size before steaming. About 8 to 10 minutes.

After turning off the heat, do not take it out immediately, otherwise it will retract. Leave the empty fire in the pot and steam for 5 minutes (the empty fire is the heat in the pot). Then take it out and put it on the grill to cool (it is hot unless you enjoy it immediately, if you put it on the plate, the steam will make the bottom of the steamed buns regenerate, which will also affect the taste).
