Poached Pork Slices

Prepare the ingredients, a piece of pure lean meat, ginger, garlic, dried chili, and peppercorns.

Cut the meat into thin slices. If you are afraid of not cutting well, put it in the freezer and freeze it before cutting it. Put salt, cooking wine, starch and a small amount of water to marinate.

Put oil in the pot, a little more, put the peppercorns and dried chilies on low heat and deep fry.

When frying until the color is slightly red, drain the pepper and dried pepper shells.

I use bean sprouts as the base, and stir-fry the bean sprouts with a little oil left in the pot and a little salt until the bean sprouts are broken.

Spoon a spoonful of pepper oil, saute minced ginger and garlic bean paste.

When the oil is red and bright, add water and bring to a boil (use the broth if there is stock). The bean paste is salty, so be careful when adding seasonings. I added some sugar, oyster sauce, and chicken essence.

Pour the meat slices into the pot, use chopsticks to cut them apart, and the meat will rise when the meat is cooked.

The remaining pepper oil is heated up by the microwave oven I used.

Chop the dried peppers and pepper shells taken out during frying and sprinkle them on the meat slices, add minced garlic, and pour hot oil on the vegetables, and it's OK.
