Pork with Dried Vegetables and Plum

Soak the dried plums in water and let stand for about an hour

Put the pork belly in the pot, put the water over the meat, boil the bleeding water, and serve

Wash the meat in cold water to remove blood foam, cut into pieces (not too big, about the size of a thumb)

Heat the pan, pour the oil, stir fry the meat and ginger together, fry out the water, pour a proper amount of cooking wine to remove the smell, add the dark soy sauce to color, the light soy extract is fresh, add the star anise, and simmer for 4-5 minutes

Pour the beer and turn on a small fire

Wash the soaked dried plums (like washing clothes), chop them, and squeeze the water dry by hand

Spread the dried plums evenly on the meat, add rock sugar, flatten, and simmer for 40 minutes

Tips:
Before cutting the meat, wipe the water off the meat and buy some dried plums, (blacker)
The meat can be bought slightly fat, and the flavor is richer. Don't put too much rock candy, it will be too sweet, a large piece is enough.
