Private Dongpo Meat

The whole pork belly with skin is boiled in water until the shape is set, and then cut into cubes after removing

Spread a layer of ginger and a layer of chives on the bottom of the casserole

Put the meat pieces with the skin side down in the casserole, put half of the rice wine (huadiao or cooking wine), soy sauce, and all the rock sugar into the pot. Medium heat for 30 minutes and low heat for 60 minutes.

When the time is up, turn the meat over, with the pig skin facing up, and pour in the remaining rice wine (Hua Diao wine or cooking wine) and soy sauce. Medium heat for 30 minutes and low heat for 60 minutes. Out of the pot.
Tips:
Be careful not to add salt throughout the process, and adjust the sweetness according to personal preference.
