Braised Noodles with Beans

Ready to work:
Weigh the flour, slice the pork belly, marinate with a little light soy sauce and salt (the amount is not in the recipe) for 10 minutes, cut the wide beans into thin strips, slice the ginger, and cut the green onions.

Add clean water to the flour to form a harder dough. There is no dry powder in the bowl.

After waking up for 30 minutes, knead the dough into a smooth dough, use a rolling pin to roll into a large dough sheet, and put it in the widest range of the dough press to form a thinner dough sheet.

Fold the dough 1/3 inward from left to right, and then cover from right to left.

Fold the dough sheet in half and thin it with a rolling pin.

After pressing the dough sheet with the 7th gear (the widest gear) of the noodle press, use the 5th gear to press out the thinner dough. Sprinkle dry powder on the dough continuously in the middle.

Use the noodle machine to press 3 steps to press out the thin noodles.

The pressed noodles are sent to the fine-tooth port of the noodle press, and thin noodles are pressed out.

Steam the noodles in a steamer for 10 minutes, turning once in the middle, drizzle the steamed noodles with olive oil, and mix well.

Heat oil in a wok, add sliced ginger and green onion to fragrant, pour in sliced pork belly and stir-fry to get oil, add beans and stir fry, top with light soy soy sauce.

Add water, over the beans, boil over high heat, simmer for about 10 minutes, sprinkle in fine salt to taste, and serve half of the soup.

Cover the steamed noodles on the vegetables, simmer for about 8 minutes on low heat, with an interval of 2-3 minutes, pour the soup on the noodles once, and finally mix the noodles with the vegetables to get out of the pot.
Tips:
The dough for making noodles should be as hard as possible, as long as there is no dry powder in the bowl when the noodles are first kneaded. After waking up for half an hour, it will be smoother if you knead it.
The noodle press I use is 1-7 gears, from small to large, so the 7th gear is the widest gear.
When pressing the noodles, use dry powder to prevent sticking until the pressed noodles do not stick.
Toss the steamed noodles with olive oil, it will not stick together easily.
It is better to use thin noodles for braised noodles, which are easy to taste.
