Purple Glutinous Congee

Rinse the purple glutinous rice and soak in clean water for at least 2 hours.

Pour 3/4 of the water in the casserole, boil and pour in the purple glutinous rice.

Cover the lid and simmer for 30 minutes on medium heat. When the purple glutinous rice is visibly expanded and soft, add red peanuts, red dates and brown sugar.

Cover the lid again and continue to cook for 20 minutes on medium heat.

Remove the lid and simmer while stirring for about 10 minutes to prevent the glutinous rice from sticking to the pot, until the glutinous rice porridge gradually thickens and the purple glutinous rice is completely soft and waxy. Sprinkle an appropriate amount of goji berries, mix well and turn off the heat.
