Purple Rice Buns

The Yunnan Mojiang purple rice that I use here is of high quality.

First use a grinder to grind the purple rice into purple rice flour.

Pour the ground purple rice noodles into a basin.

Add yeast, in fact, you can first dissolve the yeast with warm water and then pour it to make it easier to ferment.

Add water or pure milk and stir, adding pure milk will taste better.

After mixing evenly with chopsticks, knead the dough with your hands for about 10 minutes, when there are three lights: surface light, hand light, and basin light.

Cover with a wet towel to ferment, and you can see that the dough has fermented to about twice the size before, because the fermentation time required for different temperatures is different, everyone depends on the actual situation.

I took out the fermented dough and placed it on the chopping board. I divided it into two doughs of similar weight. In order to prevent the chopping board from being sprinkled with loose powder, I used a rolling pin to roll out the dough into a rectangle, trying to squeeze out the air in the dough.

Cut into small pieces evenly with a knife.

Take one of the dough and place it in the palm of your left hand. Make a bow with your right hand and continue to knead the dough into a round shape for use.

Fill the steamer with cold water, spread the steamer cloth, put the dough evenly in the steamer, pay attention to a certain amount of space between each dough, to avoid steaming becoming bigger and sticking together.

Don't panic and steam, but also proof the dough for about 20 minutes.

After proofing, cover the lid and steam on high heat. When you see SAIC, turn to low heat and steam for about 15 minutes, then turn off the heat. Do not open the lid immediately, but simmer for about 2 minutes.
