Red Date and Wolfberry Cake

Prepare the required ingredients

Soak the red dates in clean water, remove the pits, and put in the food processor

Add about 100g of water and mud

Filter the jujube puree (filter out the unbroken jujube pieces and put them aside for later use, don’t throw them away!)

Add the filtered jujube juice to the horseshoe powder, stir evenly into a powder slurry, set aside for later use

From the pot, pour the starch into about 200g of water and stir evenly

Turn on a low heat, pour the sugar in, stir until it melts, turn on a small medium heat to boil the slurry, stir quickly and continuously, until it becomes a white paste

Turn off the heat, pour in coconut milk, and mix well

Pour the stirred starch paste into the horseshoe flour paste and stir evenly

Add the soaked goji berries and the large jujube puree that has just been filtered out, and mix well
11.
Scoop the batter into the silicone mold

Put it on the pot and steam it on high heat for 25 minutes, wait for it to cool down and unmold before eating (it’s delicious hot too!)
