Red Lentil Soup

Prepare the ingredients. The red lentils are watered several times until they are washed

Onion diced

Carrot slices

Potatoes cut into small pieces

Pour the salad oil into a saucepan and heat up, pour in the onions and stir fry. Add flour and sauté until fragrant

Add carrots and potatoes and stir fry

Add red lentils

Add broth and hot water

Add salt and pepper, cover on high heat until water boils, turn to medium and low heat and cook for 30 minutes

Check that the lentils are boiled and the carrots are soft and turn off the heat. Use a blender to make a smooth thick soup

Add a little spicy oil, lemon juice or grape vinegar when eating. Chili oil method: heat a tablespoon of butter and add a tablespoon of red chili powder, stir fry and serve.
Tips:
The concentration of the soup is based on personal taste. If you like it, you can add up to 4 1/2 cups of water. Too little water and too thick will affect the taste, but you must add enough water at one time, and then dilute it after cooking and whipping will also affect the taste. You can use chicken essence instead of broth. Adding or not adding spicy oil, lemon juice or grape vinegar when eating depends on personal taste. My habit is to add only spicy oil.
