Risotto with Beef Meatballs in Tomato Sauce

Prepare beef balls ingredients: beef puree, green onions and ginger

Finely chop green onions and ginger.

Add 5 grams of soy sauce, 15 grams of light soy sauce, 2 grams of sugar, 2 grams of salt, 2 tablespoons of rice wine, 1 egg, appropriate amount of black pepper and thirteen spices to the beef puree.

Chop 15 grams of ginger and 50 grams of green onions, add water (about 90ml), and mix them into the minced meat several times, stirring vigorously.
Note: You can use an electric whisk.

Add about 30 grams of flour and mix well.
Note: Potato starch, sweet potato powder, bread crumbs can also be used here.

Pour a little more oil into the pan. The oil should cover the bottom of the pan completely.
When the oil is warm, use a tiger’s mouth to squeeze a ball out, and then use a small spoon to dig into the oil pan, just like the whole ball.

Remember to keep turning over in the middle, and take it out when it's fried. Maintain a medium fire throughout the whole process, and the fire will scorch when it gets too big.

Put all the meatballs out, pour out all the oil in the pan, save the bottom oil, and pour the homemade tomato sauce into the pan.
For 400 grams of meat puree, about 600 grams of tomatoes are used.

Add an appropriate amount of water. If the color is not red enough, you can add some finished ketchup, which is ketchup dipped in French fries.

When the sauce is boiling, pour the fried meatballs into the pot, cover and simmer for 1-2 minutes, until the sauce thickens.

Sprinkle a large handful of peas before starting the pan and mix well to make it out of the pan. Note: If the peas are older, blanch them beforehand. Do not put them in the pot and cook for a long time because the color will not be green.

When braising the meatballs, boil half a pot of water, add some salt to the water, and drip a few drops of oil to blanch the broccoli.

Finally, put the rice, meatballs, and broccoli in a bowl and enjoy.
