Rock Sugar Apricot

Prepare raw materials: apricots and yellow rock sugar. The apricots are bought from the market. They taste more sour and less sweet. I can't finish them in a short time, so I made them into rock candy apricots.

Put the apricot meat in a saucepan.

Add water. Add more water to your liking. If you like to drink sweet apricot water, you can add more. If you like to eat apricots, you can add less. If it's boiled apricot jam, it is recommended to add less water.

Add yellow rock sugar and cook on a low heat. The rock sugar melts and turns off the heat. The apricot skin will naturally wrinkle and fall off. If it is boiled apricot jam, you can extend the cooking time and boil the apricot meat until it becomes sticky.

Sweet with a slightly sour taste and soft and waxy texture of apricot meat, it is an excellent snack for the elderly and children.

In the hot summer, put it in the refrigerator to cool, it will be more delicious.
Tips:
The amount of rock sugar and water added should be determined according to your preference. If you just want to eat apricots with rock sugar, just cook them for 3 or 4 minutes, just melt the rock sugar. If there are lemons, you can add some lemon juice, which will taste better.
