Rubbing Toon Buds

Wash and remove the toon buds, and dry them in a cool place (do not expose them to direct sunlight, otherwise the toon buds will lose moisture and become soft and dark).

Place the dried toon buds in a clean, water- and oil-free basin, and do not put more at a time. Sprinkle with refined salt, and add more refined salt appropriately.

Rub the petiole of the toon bud a little harder.

Knead until the toon bud changes color and the petiole becomes soft.

Knead the prepared toon buds one by one and place them in the prepared container with a lid.

Put the container with toon sprouts in a cool place and let it stand for a week before taking it out for consumption. The kneaded toon sprouts can be bottled or sealed in a food bag, frozen and reserved for winter consumption.

Pork bone soup, hand-rolled noodles, toon buds, well, happiness is sometimes that simple.
Tips:
1. Do not scald the fresh toon buds with water, otherwise they will lose their proper aroma and taste.
2. To make toon sprouts pickles, use fine salt, and knead carefully until the petiole turns dark green.
3. The kneaded toon buds must be sealed and allowed to stand for a period of time before they can taste.
