Shacha Sauce Noodles

Wash the purchased pig fat and wipe it with a kitchen paper towel

Cut into small cubes about 1cm, slice green onion, slice ginger

Put the cut pig fat into a hot pot

After frying until the oil oozes out, turn to medium and low heat and continue to boil slowly

When the pig fat becomes dry and charred, add green onion and ginger

Fry until the surface is slightly burnt and turn off the heat

Remove the lard residue and green onion and ginger, and pour it into a bowl after the oil has cooled down slightly

Prepare the ingredients for the noodles

Add minced garlic, shacha sauce, lard, soy sauce, and black pepper to a small bowl and mix well

Bring to the pot and add water to boil, add Yangchun noodles (ramen) and stir with chopsticks, cook until they are broken, then remove and drain.

Put it in a large bowl, pour in the prepared sauce, mix well and sprinkle with chopped green onion.
Tips:
1. Pig fat fat can generally be bought in supermarkets. Put the boiled lard into a clean and dry container. The oil from half a catty of pig fat can basically be stored in the refrigerator until it is eaten.
2. Adding green onion and ginger when boiled lard can not only remove the smell, but also increase the fragrance of the lard;
3. The noodles you choose can also be handmade noodles made by yourself, or you can choose commercially available noodles. Be careful not to cook the noodles too badly. If they are overcooked, they will be difficult to stir;
4. If you like a cone with a heavier taste, you can add some spicy oil, chili sauce, etc. to mix with food.
