At this time, the snail meat is plump and there are no small snails in the shell. It is the best season to eat snails. The snails are green in color, thin in shell, large in grain, and fat in meat. They are indeed excellent delicacies. The taste and nutrition are not inferior to the "Early Spring Goose", the king of poultry in Suzhou. After the Qingming Festival, a snail butt head followed a group of small snails that gradually formed and hardened. It was troublesome to eat, and the meat quality was poor. So Suzhou people no longer eat it, and the snails can reproduce with peace of mind. It's usually cooked in sauce, but today I changed it and made a snail soup!

Snail Soup

1. Clean the bought snails

2. Fish out for spare

3. The bamboo shoots and bacon are all cut up

4. Raise the frying pan and sauté the ginger

7. Add some cooking wine and stir fry for a while

8. Add appropriate amount of water

Tips:
