Stir-fried Snails

The snails I bought have had their tail tips cut off. If not, I have to cut them off by myself. Rub and wash repeatedly with both hands.

Drain the snails, remove the core of the red pepper, wash, take half and cut into silk, take a small piece of ginger, and cut into silk.

Heat the pan over a high fire, and add the chili and ginger first.

Add the snails and stir fry quickly until the cover of the snails falls off, not too long.

Then add water, cooking wine, and salt to taste.

Cover the lid, cook for about a minute, turn off the heat, sprinkle chopped green onion, and it's OK.
Tips:
Be sure to stir fry the whole process, and the time should not be too long, otherwise the snail meat will shrink and it will not taste good.
