Snowy moon cakes are becoming more and more popular because they don’t use an oven. You don’t need too much skill, just a little bit of patience and care, and you can enjoy small mooncakes with soft skin and sweet heart.

Snowy Bean Paste Mooncake

1. The main material is ready

2. 100g snowy mooncake premix powder into the basin

3. Pouring hot water above 85 degrees into the basin, place an electronic scale under the basin, you can easily see the amount of water

4. First use a spatula to mix evenly, without dry powder

5. When it is warm, take out the dough, place it on the silicone mat, and knead it into a smooth dough.

6. Weigh, divide the dough into 9 equal parts, one of which is divided into two, knead a little matcha powder and purple sweet potato powder each to make a color; then knead the weighed red bean paste into a ball shape

7. Take a snowy dough, press it flat, the middle is slightly thicker and the edge is slightly thinner, put a bean paste ball on top

8. Hold the ice skin lightly with the tiger's mouth in your left hand, press the bean paste lightly with the thumb of your right hand, turn the bag while turning, and pinch the seal tightly.

9. Use a wool brush to lightly brush a layer of vegetable oil in the moon cake mold, then put the snowy moon cake blank into it, and press it flat with your fingers

10. The mold is buckled on the mat or in the plate, and pressed slightly harder

11. Look, a beautiful snowy mooncake is ready

12. If you think the white is too plain, take a small piece of purple sweet potato dough and fill it in the petals

13. Put the wrapped snowy mooncake blank into the mold

14. Press lightly, the snowy mooncake with cherry blossom pattern is ready again
