Add 100g of 85°C water to 100g of snowy mooncake powder to form a dough! (At 85 degrees, I just feel it, boiled water and add a bit of cool white to boil) In this step, the juice should be sieved, and the colored water is added to the dough! But the total amount of water is 100g, not too much! Make 3 doughs, each dough has 100g of water and noodles! The ratio is 1:1!

Cover the dough with plastic wrap and let it stand for 45 minutes! Then knead the crust and filling into 25g balls! My fillings are purchased products: blueberry cheese, rose bean paste, golden jujube puree! (It feels slightly sweet)
