First prepare the rice porridge ingredients, the ratio of rice to water is controlled at about 1:5

Wash the rice, put it in a pot, add water, turn to medium heat after high heat, turn off the heat after cooking rice porridge, set aside

When cooking rice porridge, prepare the medium-type dough, 175 grams of high-gluten flour, 105 grams of water and 3 grams of yeast

Knead it in a chef's machine and leave it in a warm place for fermentation

Medium-type dough fermented to three times the size

Tear the fermented medium-grade dough into small pieces and put it in the mixing tank of the cook machine (here the dough is torn into small pieces to mix evenly as soon as possible), add the main dough except the butter, and knead it until smooth. When the dough can pull out a slightly thicker film, add the softened butter, and continue to stir to pull out a stronger glove film. It is worth noting here: the original recipe uses salted butter, and I use it here. Unsalted light

Finish the kneaded dough, cover with plastic wrap and let stand for 30 minutes at room temperature

The dough after standing is divided into 12 portions, each about 40 grams

For the second fermentation, I use an oven, select the fermentation level, set the temperature to 38 degrees, add a layer of baking pan at the bottom, pour hot water and ferment to 1.5-2 times the size

Put the baking pan into the preheated oven and heat up to 180 degrees, lower the heat to 200 degrees, about 18 minutes, pay attention to the color and cover with tin foil

Tips:
The so-called fresh rice is the low-temperature storage of rice. According to the order requirements, it is still extremely fresh when received. In order to ensure the freshness of the rice, remember to store it in cold storage when the room temperature is higher than 20°C.
