Soy Pork Knuckle Soup

Soak the soybeans in warm water for an hour

Wash the pig's feet and add 1 tablespoon of cooking wine and 2 slices of ginger to the pot. Boil and blanch to remove any blood foam, then wash and set aside

Put pig's feet, soybeans, ginger slices and cooking wine into the pot, add enough water, and bring to a boil

Turn off the heat and simmer for one and a half to two hours, add salt to taste before serving
