Soy Sauce Chicken

Fresh chicken, handle it well and wash it clean.

Spread it inside and out with a little salt.
3.
Put the chicken on the chicken body for refining.

Wash the ginger and peel the garlic.

Slice separately.

Refined chicken fat, remove the oil residue.

Prepared soy sauce and dark soy sauce.

Put two rice spoons of light soy sauce and half a spoon of dark soy sauce into the pot, and add approximately the same amount of water.

Add approximately the same amount of water.

Add rock sugar, cinnamon, star anise, nutmeg and sand ginger and bring to a boil.

Put the chicken in and reduce the heat.

Use a spoon to pour the soup over the chicken non-stop, about two minutes.

When it has been cooking for about 15 minutes, add the ginger and garlic slices and continue to low heat.

Turn it over, continue to cook for 15 minutes, turn off the heat and simmer for 10 minutes.

Take the chicken out, chop it into small pieces, put it on a plate, pour some boiled chicken broth, and sprinkle with chopped green onion.
Tips:
A hen that is about six months old (the one that hasn't laid eggs yet) is not old and tender.
If you don’t have any surprises at home, you can leave them alone.
