Soy Sauce Eggplant

Remove the stalks of the eggplant, wash it, and cut it from the middle without cutting it with an oblique knife.

Cut green and red pepper into circles and mince garlic.

Put minced garlic, green and red pepper rings, light soy sauce, cooking wine, oyster sauce, sugar, a pinch of salt, and 2 tablespoons of water into a bowl to make a sauce for later use.

Pour an appropriate amount of oil into the pan, add the eggplants and fry on low heat until the eggplants are soft, remove them and set aside.
