Spicy Dried Whitebait

1 Rinse the dried whitebait and soak in water, cut the coriander into sections, and cut the red pepper into diagonal sections.

2 Heat the pan with oil, more oil than usual when cooking, drain the whitebait, stir-fry on low heat, stir-fry until the fish is golden and crispy, add a small spoon of cooking wine and stir evenly.

3 Put the red hot peppers and stir-fry together. After the spicy taste, add coriander and stir-fry until they are broken. Season with a little salt and chicken essence.
