Steamed Custard with Anchovy Prawns, Tofu and Matsutake

The anchovy prawns were defrosted in advance and washed for later use. I used the matsutake legs and washed them and blanched them for later use.

Wash the surface of the purchased water tofu, and divide it into two. Take half of the tofu and divide it into four equal parts.

Take a darker plate and try if it fits.

Take a piece of tofu and use a mold to make a heart shape, which is the shape of the mold that children like.

The 4 pieces of tofu are all buckled in shape and placed on the plate. Be careful to handle them gently to avoid damaging the shape.

Beat the eggs, add an appropriate amount of boiling water (I added 100ml) and mix well. Peel the green onions, wash and cut into chopped green onions, diced matsutake, add a little salt to the egg mixture and mix well.

Use a spoon to scoop the egg mixture into the heart-shaped tofu, and put the chopped green onion and mushrooms in the tofu.

Put a matsutake mushroom in each piece of tofu, and then put anchovies on it.

Put it into the electric steamer, add water to the water tank of the electric steamer, and cover the steaming lid. Note that this electric steamer does not need to be preheated, the air is fast, set for 10 minutes, and start the switch.

When the time is up, turn on the steamer, there is water vapor, be careful not to burn your hands, this custard is not sealed with plastic wrap, so there is a little water vapor on top, just pour it out, if only steamed custard is best sealed with plastic wrap, just There will be no steam anymore.

When it comes out, sprinkle some chopped green onion and pour some delicious soy sauce on it!
Tips:
1. The Zhenmi electric steamer does not need to be preheated, and the air is fast. Pay attention to the use of heat-resistant tableware. Do not add water above the maximum water level. After the timing is completed, wait a while before opening the steaming cover to prevent burns.
2. If only steaming custard, it is best to seal the steaming plate with plastic wrap, so that steam will not enter the custard. It doesn't matter if the water vapor enters, just go to the place.
