Steamed Egg Custard with Crab Noodles

Ingredients: 1 crab (about 350g), 2 eggs, pepper, light soy sauce, salt, oil, ginger and green onions

Crabs can’t untie the rope to prevent their hands from being injured by the tongs. Use a steel wire ball or brush to clean the shell

Scrub the crab and uncover the lid of the crab

Remove these filtered hairs and rinse them off

Wash crabs and cut into 2 halves or 4 pieces

Put the crabs on a plate, place the ginger pats on the top of the crabs, and steam them in a pot of boiling water.

Let's steam it for about 10 minutes, because it will be steamed in the egg later, so there is no need to steam it too cooked.

Take out the steamed crabs and take out the crab meat, which is crab noodles

2 Beat the eggs in a large bowl, put an appropriate amount of light soy sauce, salt, pepper, and oil to beat evenly.

Beat the egg liquid and add 200ml of water (egg and water 1:1) and mix well

Add the crab powder and put it in the boiling water pot, cover the pot and steam on medium heat

Steam for 8 or 9 minutes, sprinkle with chopped green onion, and drizzle some light soy sauce (just for coloring) to get out of the pot.
Tips:
In order to prevent the egg liquid from getting too old, the honeycomb can be opened during the steaming to release some steam, so as to avoid the honeycomb.
