Steamed Plum Fish

Clean the fish first, add salt, mix well and marinate for 1 hour

Prepare shredded ginger, shallots, dried chilies, pickled peppers and cut into sections

Add ginger and green onion to the bottom of the basin

Add the fish to the top, then add pickled pepper, green onion and ginger, and finally evenly add the white wine to the fish

After the water in the pot is boiled, add steam for 10 minutes and turn off the heat

Take out the green onion and ginger, pour out the excess juice and re-add the green onion

Add steamed fish soy sauce

Pour oil into the pot and cook until it smokes. Add 2 dried chilies to burst the aroma and turn off the heat. Pick up the dried chilies and don’t use them.

Top with hot oil and serve
Tips:
1. I like the taste of dried chili, or not add it. A little pickled pepper can improve the taste and remove the fishy. If you don't like it, you can leave it
2. The fish will be marinated for a while and it will be more delicious
