Steamed Swordfish

Clean the fish gills and fish maw and wash them.

Cut the fish into small pieces, add salt, cooking wine, soy sauce, and oyster sauce to marinate for half an hour.

Wash the ginger, green onion, coriander, and pepper, shred the ginger, cut the green onion and coriander into sections, and dice the pepper and garlic.

Place ginger, garlic, chili, and green onion around the marinated fish.

When the water in the pot is boiled, put the fish in and steam it. Steam on high heat for 7-10 minutes (depending on the thickness and size of the fish), turn off the heat and simmer for 2 minutes.

Take out the steamed fish and place the green onions and coriander around. Pour oil into the pot, heat it to 60% heat (smoke is visible), turn off the heat, and evenly pour the oil on the fish, you're done!
Tips:
Finally, pour a little hot oil on the fish, and the hot oil should be poured on the onions and ginger, which will have a fragrant onion oil taste.
