Stir-fried Beef Cubes with Eryngii Mushrooms
1.
Prepare the ingredients. If you are afraid of being hot, you can leave out the small red peppers. Hang peppers are not spicy.
2.
Cut the beef eye into a cube about 1.5 cm, add ginger powder (you can chop some minced ginger if you don’t have ginger powder), one tablespoon of light soy sauce, one tablespoon of cooking wine, and one third tablespoon of black pepper. Grab it with your hands and place it in the refrigerator. Refrigerate for 30 minutes to taste.
3.
Pleurotus eryngii is cut into small pieces the same size as beef.
4.
Chop garlic, green and red pepper into small pieces.
5.
After 30 minutes, take out the beef and add some dry starch and stir well with chopsticks.
6.
In a small bowl, mix one tablespoon of oyster sauce, half a tablespoon of sugar, one tablespoon of light soy sauce, a little chicken essence and salt.
7.
Pour more oil in the pan, stir the minced garlic until it is fragrant, pour in the eryngii mushrooms and stir fry.
8.
Stir continuously over medium heat until the pleurotus eryngii becomes soft and out of water.
9.
Add some soy sauce and stir fry a few times to color the eryngii mushrooms and serve.
10.
In a separate pot, stir-fry the diced beef in a hot pot with cold oil until it is ripe.
11.
Add diced eryngii mushrooms.
12.
Pour the pre-mixed sauce into the pan and stir-fry evenly, then pour in the green and red peppers and stir-fry until they are broken and ready to be served.
