Stir Fried Eggplant with Green Peppers

Prepare the ingredients.

Peel the eggplant and cut into thick strips.

Soak in cold water to prevent oxidation and discoloration.

Remove the seeds and shred the peppers; peel and shred carrots.

In a small bowl, add 2 tablespoons of light soy sauce, half a tablespoon of sugar, appropriate amount of salt, and add some water and stir well.

Heat oil in a pot, add green onion and ginger until fragrant.
7.
Stir-fry the carrots.
8.
Add shredded eggplant.
9.
Stir-fry until the shredded eggplant is soft, add hot peppers and stir-fry for 2 minutes.
10.
Pour in the sauce and stir fry for a while.
11.
Add minced garlic.
12.
Stir evenly out of the pot.
