#信之美# Stir-fried Pork Skin with Chili

Wash the pigskin, add cold water to the pot, add cooking wine, and blanch the ginger slices until they are broken.

Take out the blanched pig skin and scrape off the excess fat inside.

Put it in a clean pot again, add cold water, add pepper, star anise and ginger slices and cook for 20-30 minutes.

Remove the pig skin and shred it.

Wash the peppers and onions and shred them.

Heat oil in a pan, add chili and stir fry.

After the peppers are soft, add onions and stir fry.

After the onion is fry until transparent, pour in the shredded pork skin and stir fry.

Pour in an appropriate amount of light soy sauce and stir-fry evenly. The salty taste of light soy sauce is enough, no need to add additional salt.
