Stir-fried Pumpkin Leaves

Soak the picked pumpkin leaves for 30 minutes.

Tear off the skin of the stem and rub the leaves with your hands. There are fluffs on the stems and leaves of pumpkins, which will sting to the touch. The fluffs need to be removed, otherwise it will affect the taste.

Cut the stems into small sections, finely chop the leaves as much as possible, and smash the garlic into pieces.

Put the garlic down while heating the pan, and then pour the oil to avoid spilling the oil when you put the garlic after the oil is poured. Pumpkin leaves are more oil-absorbing, you can put a little more oil, but I like to eat green vegetables with less oil and lighter.
